Both of my rescue kitties were adults when I got them - one was a literally dumped out of a car in my neighborhood, and the other had been returned twice to a shelter because she had tummy issues (took a while, but we figured them out). I really do wish I had pics of them as babies - I know Dita in particular would have been an impressively floofy furball.
Same for me, I have never been sorry for only adopting senior cats, all three cats I have adopted in my life (the last one died in January from cancer) were so wonderful creatures and gave me so much happiness and I hope very much that I was able to make their last years full of happiness, too. But I also would have loved so much seeing photos showing them as little cats. They were already so incredibly cute as adults...
