Poutine is not canadian. Canada has been trying to appropriate poutine recently, but it was popular for generations before that in Quebec and looked down upon in Canada. There's a debate whether it was created in Drummondville or Victoriaville, but either way, it's from Quebec. Quebec has a tradition of quality cheese making, especially cheddar, and daily fresh cheese curds are available at corner stores and gas stations. Seeing how Canada is trying to rebrand poutine as Canadian is quite insulting to quebecers.
