GRANDMA’S BEST FLAN
I have a recipe for the most incredible flan you’ve ever had. Everyone who likes flan tells me it’s the best they have ever tasted. I make it on request. It’s important to follow these instructions precisely.
You will need.
two cans of evaporated milk
Two cans of sweetened condensed milk
2 1/2 cups of sugar
8 eggs
Vanilla, to taste
It’s best to make it in a glass baking dish, using a deep turkey roasting pan to use as a water bath.
Caramelize about a cup and a half of sugar and coat the glass pan, bottom and sides. Google can tell you how.
Gently mix eggs and mix in all four cans, 1 1/2 cup sugar, and vanilla together.
Pour the mixture through a metal strainer into glass pan.
*****This step is very important. If you do not strain the mixture, it will not turn out smooth. It will be pilly like tapioca.*****
Secure aluminum foil on top of glass dish. Place dish in large pan and fill the pan with water about 1/2 inch from top of glass. it’s much easier to put the large pan in the oven before filling with water. Baking time at 350 is approximately one hour and 45 minutes. you can check doneness the same way you do with cake. Stick a butter knife in the center and see if anything sticks to it.
If it comes out smooth it’s done.
You can make a smaller version with an eight or 9 inch aluminum pan. You simply cut the recipe in half and bake for one hour.
I hope you enjoy .
Number one would be my mom's Chicken Paprikash, but unfortunately I don't know the recipe. While not the best, one of my favorites is what she called goulash but more like if Chef Boyardee sold goulash in a can?
It's just condensed tomato soup, onions, ground beef or turkey, black pepper, and egg noodles. I use 1 medium yellow onion for every can of tomato soup.
Brown meat in a skillet, then move with a slotted spoon into a large pot, reserving drippings. Slice onions into crescents lengthwise. Saute onions in drippings or if using ground turkey in a little veg oil, until translucent stirring constantly to avoid burnt edges. Meanwhile cook noodles al dente, drain and rinse in cold water to stop them from cooking further. Add the cooked onions to the meat pot, add cans of condensed tomato soup (no water!), and cook over medium heat until bubbly. Add black pepper to taste (I use a lot!). Throw in cold egg noodles, stir and serve.
