Not guesswork, they use something called radiometric dating. Radio-active isotopes are found in fossil wood and bone.

Arizona was broken into Ari Zona for some reason in the description and that made me think (without googling) was Arizona named such because it was an ARId ZONe(A)?

Never saw this one and tbh, there isn't much petrified wood to actually see there. It's mostly the painted desert. We saw way more of the wood at the gift shop and up in Holbrook.
