Depending on how long it takes you to use a whole stick of butter, and how hot it is in your kitchen, it's okay to keep butter in a dish outside the fridge. The more dense butters like KerryGold and Plugra are perfect for this, as they go rancid much slower than high-water content butters. But yeah, that knife is a great idea.
