Because oil palm is MUCH MUCH MUCH MORE EFFICIENT compared to the others. At least for now. Bad for health? Well, any proof? The fact is many people already use it for a long time and what happens to them? Another fact is oil palm also rich in beta carotene. The only way to stop oil palm is by inventing a new kind of oil or don't use vegetable oil. Because if you want to stop oil palm, you must stop the other vegetable oil sources first. They are much more destructive.
