If Pinocchio says “my nose will grow now”, and it does, then it is the truth so his nose won’t grow. But if his nose doesn’t grow then his statement would be a lie so his nose would grow.

Unfortunately, the spell on Pinocchio only works if he knows he is lying and is doing it intentionally. If he made that statement and believed it would grow, it wouldn't. He he made that statement believing it wouldn't grow, it would.
