Say it is allowed to be two weeks, some might choose one week. Then because people throw it away rather than rely on common sense there is massive waste and if a company has decided to make the shelf life shorter, even more gets thrown unnecessarily. When milk is off it is really very obvious. A small sip is also not going to cause any harm - just in case someone has a poor sense of smell.
