"Weighing by volume rather than by weight is a big pet peeve of mine," pie artist Jessica shared with me in an interview. "The chemical reactions involved in baking require precise measurements of ingredients, and depending on how densely people pack flour into their measuring cups, they can be using up to 25% more or less than the recipe actually calls for!" Instead, she suggested using kitchen scales as an alternative. They're cheap. And they're much more precise. This leads to far fewer mistakes in the kitchen.

"Working mis en place can eliminate most blunders amateur cooks make… Issues with timing, forgetting certain ingredients, using ingredients at the incorrect temperature, etc.—all of these mistakes can be avoided when you take the time to prep and lay out all tools and ingredients before you start cooking or baking!" Jessica suggested getting everything ready beforehand.

You can train for it. When my daughter started cooking, I would set small controlled fires and let her put them out. We did paper fires, grease fires and chemical fires. We talked about melting plastic and how to clear the fumes, and we did some role playing on how to treat burns. She did start a grease fire once and put it out safely without any real damage. She's 11.

This isn’t well put - “don’t panic” Isn’t useful unless you’ve replaced the “panic” with something else (as Sun Guy said, panic I’d involuntary). Educate yourself on fire safety, understand and know how to identify flames, know your plan and be prepared. The more you know, the less you panic.

This is why I have always kept a fire extinguisher hanging on the wall, between my fridge and pantry. Its close and ready to put out any fire.

We do to. And it should be noted not to keep and extinguisher NEXT to the stove because you want to be able to reach it if there is a fire ,and right next to the fire isn't where you want to be reaching.

When I was in my 50s, I decided that it would be fun to put ALL of the candles on my cake. The heat was so intense that the inner candles were melting before all the outer ones were lit. Then the melted wax started to get on fire, and finally, the icing was starting to light up. Don't tell me not to panic - I was thinking about using the fire extinguisher on the blaze, but I wanted to eat it, after all. So I covered it with a metal mixing bowl and smothered it. Moral of the story: kids (or grandma's) don't try this at home.

Never use water. Cut the heat and cover it with a lid. If that doesn't work, fire extinguisher and call 911.

I'm actually surprised that I never freaked out once I started something dangerous to happen ... but am a lot calmer than expected. But this has a price, too - I get seriously pissed afterwards. Anyway, this is maybe the most universal advice that always is right - remaining calm allows you to act controlled and rational, and there is no such thing as a situation getting worse by this.

I caught the edge of my shirt on fire while cooking and didn't notice until my girlfriend and her kids started yelling and panicking. I just looked down at the flame, looked up at them like "Really?" and patted it out with my hand, then went and changed my shirt and went back to cooking

Once started cooking and forgot that the oil in the pot was already heating... until it was burning. Luckily I had sense enough to put the top on the pot, so it died immediatly. Last Christmas, when my husband accidentally set fire to the desk with the fondue pot, I used an old towel. But my children were very scared.

For any fire think smother or baking soda FIRST. A grease fire hit with water is a grease fire that just got spread all over the place. Hit it with baking soda. And if you spill a shitton of oil on the stove while you are cooking and it doesn't ignite, throw baking soda on it anyway - while the fire is still on... It will keep it from igniting. And make it easier to clean up later!

My grandma was once watching me and my brothers when I was about eleven. My youngest brother wanted mac and cheese and we have a gas stove. My grandma spilled water over the side of the pot and, being the perfectionist she is, grabbed a paper towel to wipe it off. The paper towel got too close to the fire and caught on fire. She panicked and started waving it around and my grandpa snatched the paper towel, threw it in the sink, and turned the sink on silently. My grandma doesn't exactly use our gas stove anymore.

Baking soda. I set the cheese on fire (long story) - flames and all - without thinking I grabbed baking soda and dumped it on and the fire went out. My husband asked how I knew to do that and I have no idea - maybe something I saw my grandmother do? Baking soda is always nearby....

I've experienced a chip pan fire. Fortunately, my girlfriend at the time was sensible and wetted a towel and drained as much water from it as possible and smothered the pan (turned off the heat and we stepped away for a long time). My other friend wanted to pick up the pan and throw it outside. NO. NEVER. EVER. EVER. I do like home cooked chips, but NEVER fill the chip pan more than a third full of oil, never take your eye off the pan and always remember to pay attention. ALWAYS.

Not recommended anymore by UK fire safety officials due to the difficulty in having the tea towel the right dampness - too dry it burns and too wet it can erupt. I was told it was a bad idea by a fire officer attending my kitchen fire (smothered most with a fire blanket). The spices will congeal in their containers from the moisture introduced. Instead put the spices in a separate side container then add to a steaming pot.

Don't send a nice knife through a dishwasher

Don't leave a sharp knife in the sink

Don't leave a knife wet, even ones claiming to be stainless will often rust if left wet.

I had a recipe that had 130g of Butter. The recipe said "mix 120g Butter with..." and at the end "use the leftover 10g of Butter to...". I overlooked that I had to use only 120g at the beginning, instead of the whole 130g. So yeah. Read the recipe through before starting.

High heat to sear meat when you want the outside cooked much faster than the inside. Low and slow if you want the meat cooked evenly. Both have their time and place, so make sure you know what you’re going for before picking your cooking method.

Also, allow liquids to cool a bit before tasting. Hot vs warm vs cool liquids all taste different. One of my favorite things is Korean Lunchbox Potatoes (Gamja Jorim). Because they are meant to be eaten at room temp, if you taste them while they are cooking, by the time you eat them fully cooled, you may as well be eating a block of soy sauce.

There are such things as smash burgers, but I believe on those, you smash them at the beginning before the fat has a chance to melt so you’re not smashing the juice out.

Pasta should never, ever be rinsed for a warm dish. The starch in the water is what helps the sauce adhere to your pasta. The only time you should ever rinse your pasta is when you are going to use it in a cold dish like a pasta salad or when you are not going to use it immediately

Adding olive oil to pasta water while cooking is pointless. I think the idea was that it was supposed to stop the pasta sticking together but all it does is float on top and serve no purpose at all.

Or, better yet, get a honer to realign the knife and make it last much longer than if you sharpen it regularly. Sharpen around once or twice a year, but hone your knives with each daily use.

Yeah, that's too late. You need to remove things from heat a little earlier than youd think so that the ambient heat continues to do its job. Otherwise you're overcooking it.

Using sugar to take the edge off a highly acidic sauce. Just put a damn carrot in it and let it absorb the acidity instead of covering it with a new flavor.

I like to put in a couple of tablespoons of milk or cream to an acidic tomato sauce. If I want a more rich taste, it might be a bit of parmesan.

I saw a girl burn the hell out of herself because she didn't listen to the Home Ec. teacher. She threw her hot oil in a sink with some cool water running. Boom! Sprayed hot oil all over her arm and neck. Let your oil cool folks.

Don't throw oil down the sink at all! Unless you want to develop a very close relationship with your plumber, not to mention mess up the sewers for everyone else.
